Left over turkey curry


There are many turkey curry recipes... ours is an adaptation of Great British Chef Turkey curry recipe and best turkey balti recipe

750g - 1kg left over turkey - chopped into chunks

  • 2 large onions - chopped

  • 3 large cloves of garlic

  • 1 tsp coconut oil

  • 2 tsp cumin

  • 2 tsp coriander

  • 2 tsp turmeric

  • 2 tsp Gram masala or curry powder

  • 2x peppers

  • 1/2 aubergine

  • 1 tin tomatoes

  • 1 can of coconut milk

  • 200ml passata

  • 100 ml stock or water

  • 2 x sweet potato

Chop the onions and garlic, melt coconut oil in a casserol. Add cumin, coriander, turmeric and curry powder and fry for a few minutes. 

Add chopped peppers and aubergine, tinned tomatoes, coconut milk, passata, stock, turkey and potatoes and let it simmer for 1/2 hr.
