Bramble Farm turkeys will cook much quicker than standard supermarket turkeys as ours are reared longer and have more intramuscular fat. Which ever recipe you cook, please use a thermometer to tell you when it's done. Take it out at 60 °C, leave it out uncovered for 30 mins +, when bird reaches 65 °C it's done.
Cooking a free range whole turkey
Jamie Oliver recipe cooks higher-welfare birds. For his recipe, you need the following ingredients:
- 12 rashers of smoked streaky higher-welfare bacon
- 2 heaped tablespoons plain flour
- 2 tablespoons cranberry sauce
Pre-heat oven to 180ºC/350ºF/gas 4, aga on hot.
Cook for 25 to 30 minutes per kilo for higher-welfare birds such as Bramble Farm free range Turkeys..
e.g. 7 kg bird requires nearly 3 hrs to cook.
Note: we recommend you also use a thermometer as we do in our recipe.
