These recipes are based on starting with uncooked turkey thigh rolls. If you’re using cooked leftovers, put the turkey in towards the end of the dish, so as not to overcook it.

Please remember Bramble Farm turkeys will cook about 30% quicker than standard supermarket turkeys as ours are reared longer and have more intramuscular fat. So, Please use a thermometer to tell you when it's done. We take ours out when the coldest part of the bird is 65 °C see our oven cooking instructions as a guide (as BBQ will be slightly different)
